Apple Glaze
1 Gallon Apple Juice
1 Gallon Apple Brandy
1/2 Lb. Butter
6 ea. Shallots, chopped
6 Sprigs Thyme
Cloves
Cinnamon Sticks
Cayenne Pepper (optional)
Sweat shallots and thyme. Deglaze with apple brandy. Add apple juice. Reduce
by half. Strain. Whisk in butter. Add cinnamon sticks, cloves, and cayenne to
taste.
