Coconut Curry Sauce
3 Tblsp. Garlic, chopped
3 Tblsp. Ginger, peeled and minced
1 Oz. Olive oil
2 Tblsp. Curry paste
8 Oz. Tomato paste
2 Tblsp. Brown sugar
3 Oz. Soy sauce
2 Tblsp. Coriander, ground
1 Tblsp. Cumin, ground
2 Tblsp.
Paprika 60 Oz.
Coconut milk
Sweat garlic and ginger in olive oil. Add curry paste and tomato paste. Mix
well. Cook for 5 minutes. Whisk in all other ingredients. Simmer at least 20
minutes. Remove from heat and strain through chinois.
