Corn Salad
4Ea. Andouille sausage links, small dice
5 Ea. Red peppers, roasted, cleaned and diced
5 Ea. Yellow peppers, roasted, cleaned and diced
5 Ea. Pablano peppers, roasted, cleaned and diced
1 Bunch Cilantro, chopped
1 Cup Chives, shaved
1 1/2 Gal. Roasted corn, shaved
2 Ea. Red onions, diced 1 Cup Honey
3 Ea. Limes, juice only
1 Cup Sherry vinegar
Olive oil Salt and pepper to taste
Combine peppers, cilantro, chives and corn in a bowl. Season. Render andouille
until crisp. Drain over diced onions. Add honey, lime juice, vinegar, salt and
pepper. Whisk in olive oil to proper ratio. Add to corn mix. Adjust.
