Cumin Vinaigrette

2 Tblsp Whole cumin seeds

2 Ea. Limes, juice only

5 Ea. Shallots, small dice

3 Cups Chardonnay vinegar

Olive oil

Salt and pepper to taste

Toast cumin in a sauté pan. Cool. Grind in coffee grinder until fine. In a bowl, mix lime juice, vinegar, shallots, and seasoning. Whisk in oil to proper ratio, whisk in cumin. Adjust.
