2 Ea. Whole salmon filets
1 Lb. Brown sugar
1 Lb. Kosher salt
3 Ea. Oranges, 1 sliced, 2 juiced
3 Ea. Lemons, 1 sliced, 2 juiced
3 Ea. Limes, 1 sliced, 2 juiced
Mix the salt and sugar in a bowl. In a 4-inch full hotel pan, line bottom
with citrus slices. Sprinkle some of the salt/sugar mixture over fruit. Sprinkle
dill over that. Add vodka. Pack salmon with salt/sugar mixture. Add juices to
make moist. Flip salmon flesh side down into prepared pan. Cover with plastic.
Place another 4-inch full pan over fish. Weigh down with # 10 cans for approximately
