Hong Kong Vinaigrette
2 Bunches Cilantro, chopped (leaves only)
1 Qt. Soy sauce
20 Ea. Limes, juiced, and zested
1/2 Bottle Fish sauce
3 Bunches Scallions, sliced (use all of scallion)
1/4 Cup Ginger, peeled, grated
1/2 Bottle Fermented black bean sauce
3 Cups Sugar Olive oil Combine all ingredients except olive oil in a bowl.
Whisk in oil. Adjust. Make fresh daily. Can be made spicier.
