Ice Cream Base
60 Egg yolks
8 Quarts Heavy Cream
49 oz Sugar
2 Ea. Vanilla Beans, scraped
Combine 1 quart of cream and egg yolks in a large bowl. Heat to 180 degrees
over a double boiler. Incorporate the rest of the cream, sugar and vanilla beans
into hot mixture over an ice bath.
