Lemon Vinaigrette
20 Ea. Lemons, grated on box grater
3 Cups Sherry Vinegar
1-2 Cups Sugar
Olive Oil
Salt and Pepper to taste
Reduce juice by half. Chop zest fine. Add hot juice to zest. Add 1 cup sugar
to hot liquid to dissolve. Add vinegar. Add proper ratio of oil. Add salt and
pepper and more sugar to taste.
