2 Cups Celery, small dice
2 Cups Carrots, small dice
2 Cups Onions, small dice
5 Boxes French green lentils
Chicken stock
Salt and pepper to taste
Render bacon until crisp. Add mirepoix. Sweat. Add lentils. Sweat. Add stock
(finger length from lentils).Simmer until tender. Season.
