Mango Salsa
1 Cup Apple cider vinegar
1 Cup Rice wine vinegar
2 Ea. Jalepeno, minced
1 Tblsp. Ginger, peeled and minced
1/2 Cup Sugar
1 Bunch Scallions, thinly sliced
2 Ea. Mangoes, small dice
3 Ea. Scotch bonnets, minced
1 Ea. Pablano, minced
1 Bunch Cilantro, chopped
2 Ea. Smoked tomatoes, small dice
Olive oil
Salt and pepper to taste
Reduce both vinegars, one of the jalepenos, ginger and sugar together to a
syrup. Cool. Fold the remaining ingredients into cooled syrup.
