Pearl Pasta (Toasted)

2 Gallons Onions, medium dice

2 Gallons Celery, medium dice

2 Gallons Carrots, medium dice

3 Bulbs Garlic

1 Ea. Pablano, minced

15 Bags Toasted pearl pasta

2 Gallons Chicken stock

Basil oil Salt and pepper to taste.

Sweat Vegetables in olive oil. Add pearl pasta and coat. Cover with stock. Cook for about 9 minutes, stirring and adding more stock if necessary. Pasta should be al dente. Remove from heat. Coat with basil oil, add salt and pepper. Cool on sheet trays.
