Shrimp Fritters

4 1/2 Cups All-purpose flour

1 1/2 Cups Corn meal flour

3 tsp Baking powder

Cayenne Pepper

Salt and pepper to taste.

1 1/2 Cups Milk

9 ea. Eggs

3 Bunches Scallions, sliced

2 Cups Shaved Corn

3 ea. Red peppers, small dice

2 Cups Rock shrimp

Sift fours into mixing bowl with cayenne, salt and pepper. Add shrimp, corn, peppers and onion. In a separate bowl whisk together eggs and milk. Make a well in the dry ingredients and add liquid mixture. Mix thoroughly but DO NOT OVERMIX. Chill at least one hour. Batter should be firm enough to hold it's shape in a spoon. Thin with milk or thicken with flour as needed. Fry at 350 degreess. Season.
