Tomatillo Sauce
6 Ea. Onions, small dice
2 Ea. Pablanoes, small dice
4 Ea. Jalepenos, minced
3 Bulbs Garlic, chopped
20 Lbs. Tomatillos, peeled
2 Bunches Cilantro, chopped
4-8 Oz. Lime Juice
Salt and pepper to taste.
Sweat Vegetables in olive oil. Add tomatillos and cilantro. Barely cover with
water, boil. Simmer until tomatillos begin to break apart. Strain, reserve liquid.
Blend tomatillos. Adjust consistency with reserved liquid, and add lime juice
and salt and pepper.
