Tomato Sauce
8 Ea. Onions, large dice
4 Heads Garlic, chopped
8 #10 Cans Canned tomatoes
1/4 Can Tomato paste
1/2 Cup Worcestershire sauce
2 Cups Red balsamic vinegar
1 Bunch Basil, chopped
1 Bunch Oregano
8 Ea. Bay leaves
Salt and pepper to taste.
Sweat onions and garlic. Add tomato paste and cook for 10 minutes. Add canned
tomatoes. Simmer for 2 hours. Add herbs and burr mix. Add balsamic vinegar.
Adjust. Strain through large-holed china cap.
